Unless you’ve set a default iPhone calendar, if you’re connected to iCloud, iPhone chooses to place all your new calendar entries in the iCloud calendar. This is the calendar iPhone selects when you press the plus button or use Siri to add an event to your calendar.

Tap the one you want to set as the default iPhone calendar.
After selecting this you will be back to Mail, Contacts, Calendars setting and you will see the new default iPhone calendar.
You can do this with any calendar you want to use. If you need to enter a lot of calendar entries in a calendar, you can set it as default and then set it back. On this screen you can also change the time zone settings, week numbers, add alternative calendars and default calendar alert times so you always have time to get where you want.
